I impressed myself making these Italian rainbow cookies so much. I’m considering getting a dual citizenship to Italy. I’m making 12 cookies this holiday season, and these are cookie number five. This was my first time making these, and while they visually might look like a lot of work, they were surprisingly easy. I always see these kind of cookies in other bakers cookie boxes, so I definitely knew I had to give them a try. Growing up, we didn’t make cookies like these for the holidays, so it’s been super fun trying out different kinds and finding new favorites. Once the batter is ready, we’ll separate it into three bowls and then add green food coloring to one, red food coloring, and then leave one as is. Thankfully, I happen to have three 9 by9 pans, but you can also definitely just take your time with one. The actual process of building these was super surprising. We add our green layer and then our jam. I’m doing apricot, but you can also do raspberry or honestly any other kind. The layers will then need to literally get smashed together. I first started by adding cans and then I used a cast iron pan to really add on more weight. This then goes in the fridge overnight. The next day, everything comes off and we can unwrap it carefully. I then add some melted chocolate on top and let it set before adding more to the other side. The key here is right before it’s fully set, we use a fork to create some of those wave designs. I was really happy with how these turned out. You can see the defined layers and they tasted amazing. Add these to your holiday dessert boxes this year. I hope you give it a try and enjoy.   1. I was taught how to make these, the old fashioned way…… I was five when I started to learn, from a baker in Manhattan……. He made his own almond paste, and we would use raspberry and apricot preserves, which we would simmer down to a very thin liquid, so when we poured it over the cakes, it would seep down into each layer……… They would be weighed down, for 24 hours before chocolate was put on top……. It really is a labor of love to make these, but they are so delicious………
