For the life of me, I can’t make royal icing with the consistency I want! Too stiff, too loose, too gooey, etc. 😫 My social media is flooded (no pun intended) with cookie decorator videos and I envy their perfect consistencies. I daydream about what I could do with the perfect icing!

I make it work, but I am constantly changing my design plans around whatever consistency I end up with. Meringue powder is too expensive to waste on experimenting.

Here we have my (and my daughter’s) latest batch. I “specialize” in Christmas chickens and recently added alpacas to the mix.

    I’m afraid I am no help with your icing consistency, but I absolutely love your Christmas chickens! I have never wanted a cookie cutter more.

    A tip I learned that really helped with my consistency is to add water with a spray bottle. I don’t use meringue powder so I don’t know how it starts out, but when I make mine it’s very stiff to start. I add a few sprays of water at a time, then mix. I keep repeating that until I’m close to where I want my consistency, then I’ll only add 1-2 sprays. If I overdo it, a sprinkle of powdered sugar will thicken it back up.

    That said, your cookies look lovely! You should be super proud of those results. I know how hard it is to keep pivoting your plans because your materials won’t comply. Keep up the amazing work!
