This is a 2 pound pasture raised ribeye. Put in the oven until 115 then took it out and seared it in ghee.. I honestly took it a little bit past where I wanted it to be, but it did render the fat a little bit more and ultimately turned out very good according to my mouth. Couldn't finish it all, but it made a great breakfast as well.
