    You can do low calorie with actual food without breaking the bank.

    My daily driver has 32g of fiber per roughly ~650 calories (2×2 cup mason jars) Lentils, barley, potatoes, green beans, carrots, bell peppers, corn, cremini mushrooms, shiitake mushrooms, pinto beans, black beans, spinach, onions, tomatoes. Hits all of the major vitamins and minerals.

    Costs about $100 a month, in Alaska (so probably cheaper elsewhere).

    It’s really flexible. Can be turned into a soup or heated up as is, works with all sorts of seasoning. Can add meat if that’s your thing. Also leaves a lot of overhead for other food. I try to stick between 1000-1100.

    Nice time cook it and then blend and add a little milk or cream and you get a nice cream of celery type soup

    Your celery is waaay to big if chunks. Need to be slices if under 1/4″ closer to 1/8″ I know this recipe. You should also have cabbage,onion and carrots. Needs to cook for about 1.5 to 2 hours minimum with your broth. Pouring hot water on a raw vegetables is not making soup by any stretch of the imagination.

    You could have made this a lot better for the same amount of calories, with just a little effort.

    You could have cooked the celery for a start, sautéed to start it off & give it a little more flavour than just boiling alone.

    Then if you really wanted to push the boat out, once it has softened, blend it together. You will get something a lot closer to cream of celery soup, a thicker, tastier soup. And to make it actually creamier without cream, add in a dollap of fat free greek yoghurt. It’s low calorie & will bring a little protein to the table.

    This is more depressing than it needed to be.

    Do you like it? Do you enjoy the crunchy raw celery in hot broth? I wonder if you could make something better in the microwave.

    Slice celery and toss with salt, drizzle with oil and microwave for a few minutes, tossing every 30 seconds. Maybe you’ll soften it and get a touch of browning? Then add the broth and microwave a bit longer, simmer the celery in the broth.

    It might end up being a lot better for only a tiny bit more work. But I guess if you like it your way…I just can’t imagine it’s actually good.
