
Recipe:
Crumble —
* 3/4 cups brown rice flour
* 3/4 cups oat flour
* 1 1/2 cups gluten free oats
* 3/4 cups brown sugar
* 1 Tbsp cinnamon
* Pinch of salt
* 4 oz (1/2 cup) dairy free butter, chilled and diced
Filling —
* 5-6 granny smith apples, cored, peeled, and roughly chopped or quartered
* 3/4 cups apple cider
* 1/4 cup vanilla extract
* 1/4 cup maple syrup
* 1 cup brown sugar
* 4 Tbsp cinnamon
* 3 Tbsp cornstarch
Directions
1. Preheat oven to 350F. Grease an 11-inch oval baking dish (about 2 inches deep).
For crumble — in a medium mixing bowl, add both flours, oats, sugar, cinnamon, and pinch of salt. Whisk to combine. Add diced butter and rub into mixture until it resembles pea sized crumbs.
For filling – in a large mixing bowl, add diced apples and other ingredients. Mix to evenly coat apples in spices and sugar.
Add apple mixture to oval baking dish. Add oat crumble on top, evenly spreading so it covers all of the apples.
Bake for 40-45 minutes or until crumble is deep, golden brown. Remove and serve with a scoop of dairy free ice cream.
