    250 g cannelloni tubes
    Tomato sauce:
    2 shallots
    2 garlic cloves
    2 carrots
    3 tbsp olive oil
    1 bay leaf
    1 cinnamon stick
    a few rounds of chili from a mill
    2 cans (400 g each) cherry tomatoes
    1 dl red wine
    2 dl pitted Kalamata olives, chopped
    3 dl cooked white beans
    1 dl minced oregano
    Finger salt, freshly ground black pepper
    1 tsp sugar

    Spiced crème fraîche:
    600 g cream of cream
    100 g grated parmesan
    1 tbsp grated lemon zest

    Topping:
    100 g goat cheese in small pieces
    100 g grated parmesan
    a few sprigs of rosemary

    Looks great! How long did you cook the sauce for? And how long in the oven?

    Sounds delicious but while this may be Mediterranean cuisine it is in no way compliant with the Mediterranean diet.
