I absolutely love how fresh zucchini and sweet carrots come together with garlic, dill, parsley and Italian seasoning — the aroma is unbelievable! These veggie bites are crispy on the outside, tender inside, and super easy to make. They pair beautifully with a refreshing homemade yogurt–dill sauce. 📌 RECIPE
Ingredients:
3 zucchinis
Salt
2 carrots
Green onions
Dill & parsley
2 garlic cloves
2 eggs
Black pepper
Paprika
Italian seasoning
60 g (½ cup) grated parmesan
4 tbsp breadcrumbs
Olive oil
Shredded cheese (for topping)

👩‍🍳 Directions
• Grate zucchini, sprinkle with salt and let sit for 10 minutes.
• Grate carrots and mix with chopped green onions.
• Add finely chopped dill and parsley.
• Add minced garlic.
• Squeeze excess liquid from zucchini and add to the veggie mix.
• Add eggs, pepper, paprika and Italian herbs — mix well.
• Add finely grated parmesan and breadcrumbs — mix again.
• Form small balls.
• Brush with olive oil and place on a baking tray.
• Bake for 30 minutes at 400°F (200°C).

🥣 Sauce:
• Mix 1 tbsp mayonnaise + 1 tbsp Greek yogurt or sour cream.
• Add chopped dill, 1 grated garlic clove and juice of ½ lemon.
• Mix — the sauce is ready!

🧀 Final Step:
• Remove veggie bites from the oven.
• Sprinkle with shredded cheese.
• Bake for another 5–10 minutes at 400°F (200°C).

3 zucchini. Grate on a coarse grater. Salt. Stir. Leave for 10 minutes. 2 carrots. Grate on a coarse grater. Chop the green onions. Add to the carrots and stir. Dill and parsley. Finely chop. Stir. 2 garlic cloves. Add to the vegetables. Squeeze the zucchini juice. Stir well. 2 eggs. Black pepper. Red paprika. Italian herbs. Stir well. Pour the eggs into the vegetables. 60 g Parmesan. Grate on a fine grater. Add to the vegetables. 4 tablespoons breadcrumbs. Stir everything thoroughly. Form into balls. These balls are delicious! Brush with olive oil. Place in a baking dish. Bake in the oven for 30 minutes at 200°C (400°F). Let’s make the sauce! Mayonnaise – 1 tablespoon. Greek yogurt / sour cream – 1 tablespoon. Stir. Dill. Finely chop. 1 garlic. Mix well. Juice of 1/2 lemon. The sauce is ready! Cheese. Grate on a coarse grater. Remove the vegetable balls from the oven. Sprinkle with cheese. Bake in the oven for 5-10 minutes at 200°C (400°F). That’s it! It’s very flavorful and incredibly delicious! Enjoy!
