Volunteer grill guy for my family’s restaurant here once again. This is a huachinango zarandeado or grilled red snapper. Took about 20 minutes on my Santa Maria grill

    A fish that flat would cook to a perfect 120F in two mins per side, tops.

    Reminds me of my trip to Cape Town in South Africa. Everybody was cooking with a set up like that. And the baskets.

    I can’t fit a fifth barbecue in my area, but I may push out the propane to build something like this. Then I guess the Weber kettle would go too. But I would keep the lid.

    Looks like a nice fish on the Barbie. I was out fishing and I couldn’t keep the snappers off of my line. Problem was they were out of season. We ended up going for amberjack’s and we got lots. They’re just as tasty.
