I threw a cod fillet from my freezer to my fridge this morning so it would be ready to bake when I got home. Baked it in a glass pan on parchment paper with a little olive oil, and slathered it with the chimichurri sauce from the refrigerated section of Trader Joe’s. Baked at 400 degrees for 15 minutes and it came out perfectly. Served it with the Broccoli and Kale Slaw kit, also from Trader Joe’s (I swear I’m not on their marketing team, they just have really good shortcuts for healthy meals). The dressing that comes with the kit isn’t fully compliant (soybean oil), but I’ll take it.
