Welcome back to another ingredient prep video! This one is Mediterranean-inspired with simple and wholesome ingredients 💚
Tzatziki:
– 1 1/2 cup full fat yogurt
– 3 cloves garlic
– juice from 1/2 lemon
– pinch of salt
– 1/2 large cucumber or 3/4 cup, grated
– fresh pepper, pinch
– 2 tbsp fresh dill
– 1 tbsp olive oil
Lemon Greek Potatoes:
– 3 lbs yellow potatoes
– 1/3 cup olive oil
– 1/4 cup lemon juice
– 1/2 cup veggie stock or chicken stock
– 2 tsp salt
– 1/2 tsp pepper
– 1 tbsp dried oregano
– 2 tsp dried parsley
– 7 cloves garlic, minced
Instructions:
1. Preheat the oven to 350 F (185 C).
2.. Cut potatoes into half inch wedges.
3. Place potatoes in a baking dish with all other ingredients, toss to coat.
4. Remove the potatoes from the oven part way to stir.
5. Bake for 45 minutes or until golden brown.
Hummus:
– 2 cans chickpeas (3 cups)
– juice from two lemons
– 1 garlic clove, chopped
– 3 tbsp tahini
– 1 tbsp olive oil
– 1/2 tsp salt
– 1/4 cup ice water
– 1 tsp paprika
– 1/2 – 1 tbsp olive oil for the top (sub for chilli oil if you’re feeling spicy)
Instructions:
1. Optional but I recommend removing the skins from the chickpeas. It makes for a smoother textured hummus.
2. Add chickpeas, lemon juice, garlic, tahini, olive oil and salt in blender
Slowly add in the ice water while blending.
Greek Dressing:

Roasted Chicken:
– 4 chicken breasts
– 1 tbsp olive oil
– 1/2 tsp oregano
– 1/2 tsp garlic powder
– 1/2 tsp paprika powder
– 1 tsp dried parsley
– 1/4 tsp salt
– 1 tbsp light brown sugar
Instructions:
1. Preheat the oven to 400°F. Line baking tray with parchment paper.
2. Coat the chicken with the spices and sugar.
3. Bake the chicken for 30 minutes but I would recommend using a meat thermometer to make sure the meat is fully cooked. It should read 165°F.

It’s nice to see you’ve started introducing animal products. I’m about your age and have introduced animal protein as well. I’d love to see more videos on meal inspo for those in our 40’s that are high protein and high fiber. Things I’m trying to focus more on
what is going to be done with the broccoli and tofu throughout the week?
Sad to see another of my YouTubers reverting back to animal products 🫤 I get the age thing, I’m 50. However I’m finding other ways to get in my nutrition rather than reverting to eating animals. I’m not typing this in a mean way, just saying I found it disappointing as I really enjoyed your channel.
My mother was just diagnosed with ovarian cancer two weeks ago. She eats an omnivore diet. Her oncologist (not vegan) told her to not eat meat, dairy, sugar or grease now because it will increase the rate at which the cancer cells grow. I have a coworker with colon cancer and she was advised to do the same. Seems like animal products aren’t as healthy as touted.
Sadly I feel both will not take the advice because people just refuse to give up their steak and bacon 😔
