Going to do a reverse sear. Cook low and slow and rest for 1 hour. Then back in a 550 degree oven for 7 minutes. I’ll post the finished product. It’s been heavily salted, peppered and uncovered in fridge waiting for it’s finale. Wish me luck!

  4. That’s not choice, my friend. That is some of the good ol’ select stuff from Canada that’s been flooding the market lately.

    Gonna guess this is from an Albertson’s company (Safeway, Shaws, etc) and you probably paid 7-9$ per lb for it with a digital coupon. (11.99 sticker price without)

    Got one that looked much like that from Trader Joe’s. Cut most of the fat cap off, salted it a few days in advance. Gonna give it a long low sous vide and then sear just before serving.

    Marbling on the eye sucks. Very small cap. Tons of fat you’re getting charged for. Trash AF piece right there.

    That is a terrible rib roast but if cooked right should be ok. That looks more like selection than choice as the marble is non existent. Enjoy it though. Its about memories more than food.

    Trim the fat off. If you cook at around 250, you can throw it in a container in the stove at the same time and make tallow. Chop it up into tiny pieces so that it renders well.
