    I love that it’s super easy to make and prep and tastes amazing. The Christmas version is the best imo. Screw the crepe 😂

    Beef looks absolutely spot-on, but the pastry is ‘shitting through the eye of a needle’ raw on the inside.

    Wrap the duxelle in crepes so the pastry cooks through, and you’re on to a winner

    Looks amazing. Love the flaky salt on top and the pastry looks good. If there was any feedback I’d say just be sure to roll it a bit tighter next time.

    I think you should improve on that particular recipe. Please allow me to test every iteration of this experimental technique. It’s not what i want. However i am willing to make a sacrifice on this occasion. I shall send you my details.

    Stunning! The beef is cooked to perfection! If there is a next time – you can cook it on the lowest rack for half the time to cook the bottom puff a little more. Then switch to the mid rack the remaining time to not overcook the bottom. Did you cook on parchment parchment or directly on the pan? Well done! This is a lot if work. I’m sure your guests were delighted 😃 😋🤤 (edit: I see you baked right on the broiler pan. Maybe cook on parchment to give some of the fat somewhere to disperse and brown.
