My question is why are rib roasts so cheap this time of year but throughout the year they are so expensive? Why can they not be 6.99 a pound throughout the year. Kinda makes you wonder.

My absolute favorite meat for a holiday is a rib roast. I find it much easier to get good results. My wife prefers turkey. Needless to say, we have a turkey every Easter, Thanksgiving, and Christmas.
That’s not actually true this year. We were promised a frozen turkey far enough ahead of time to thaw for Christmas this year. What we received was a mostly thawed bird. That means we are having turkey tonight and a rib roast on Thursday. My wife isn’t thrilled.

The question is do you have an oven big enough? Looks great. Rib roasts and prime rib are so easy to make. I use the 500 degrees for 15 minutes then drop the temperature to 325. I make a great rib for it while it gets to room temperature before beginning. I use a meat thermometer and when it gets to 130 degrees it is a beautiful rare. Or let it get to 135 if you want a medium rare to medium rare
