Creamy chicken red pepper pasta

For the chicken

1 lb boneless chicken breast, Slice in half lengthwise, pound to an even thickness (about ½ inch).
Salt to taste
1 tsp lemon juice
1/2 tsp black pepper
1 tsp smoked paprika powder
1 tsp garlic powder
1/2 tsp onion powder
1 tbsp oil ( for marinating )
2 tbsp oil for cooking

For the sauce:

2 tbsp butter
1/2 yellow onion
6 cloves freshly garlic, minced
1 cup red bell pepper , diced
1 tbsp red pepper paste
3 tbsp tomato paste
3 tbsp cream cheese
1 1/2 cup unsweetened heavy whipping cream
1 cup chicken broth or 1 cup water + 1 chicken bouillon
Salt to taste
1/2 tsp black pepper
1 tbsp smoked paprika powder
1 tsp garlic powder
1 tbsp chopped parsley
1/2 cup parmesan cheese

To assemble:

8oz penne pasta, boiled according to package instructions

Method:

In a bowl add chicken, season with salt pepper, smoked paprika powder, garlic powder, onion powder and lemon juice . Drizzle some oil and mix to coat evenly. Let it marinate for 30 minutes

In a pan add oil on medium heat once the oil is hot at the marinated chicken and Cook 4–5 minutes per side or until golden brown and internal temp reaches 165°F. Remove the chicken, let it rest for 5 minutes then Slice into pieces.

Add butter to the same pan. Add onion and garlic. Sauté for 1 to 2 minutes until they become translucent. Add in tomato paste and red pepper paste, mix well. Season the mixture with black pepper, paprika powder, and garlic powder. Pour in the chicken broth and let it simmer for 1 – 2 minutes. Taste and adjust the salt. Add the heavy whipping cream and cook the mixture on medium-low heat until it thickens. Stir in the cream cheese and whisk until it’s completely dissolved. Finally, add the grated Parmesan cheese and parsley.

Add the boiled pasta and chicken, mix them together, and serve warm.

    I had to check those ingredients real quick! Look like she had a little Sazón in there when she was searing that meat…😩but it was paprika.. Si es Goya, tiene que ser bueno" But I’m still gunna try it because it looks delicious!
