Spinach & Feta Stuffed Chicken – Recipe by What Shall I Cook
Ingredients:
• Chicken breasts – 4 large, boneless & skinless
• Fresh spinach – 2 cups, chopped
• Feta cheese – 1 cup, crumbled
• Garlic – 2 cloves, minced
• Olive oil – 2 tbsp
• Salt & pepper – to taste
• Paprika – 1 tsp (optional, for color)
• Lemon juice – 1 tbsp
• Toothpicks or kitchen twine – for securing
🔪 Instructions
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet, sauté garlic and spinach until wilted (2–3 minutes). Remove from heat.
Stir in feta cheese and lemon juice. Set aside to cool slightly.
Using a sharp knife, carefully slice a pocket into each chicken breast (don’t cut all the way through).
Stuff each pocket with the spinach-feta mixture. Secure with toothpicks or twine.
Season the outside of the chicken with salt, pepper, and paprika.
Heat a skillet with a little oil, sear chicken on both sides until golden brown (about 3 minutes per side).
Transfer to a baking dish and bake for 20–25 minutes, until chicken is cooked through (internal temp 165°F / 74°C).
Remove toothpicks, let rest for 5 minutes, then serve.
