    Looks great.

    The spottiness of the sear can be improved, though, if you’re willing. Three recommendations, from easiest to implement to most difficult. 1) Flip it every 20 seconds, moving it around the pan frequently as you go, for the same 120-second duration. 2) Weigh it down. 3) Chill it pre-sear, giving you most time in the pan without causing a grey band.

    It was telling when someone else thought it was pizza. You want broad, even caramelization.
