Ingredients:
– Olive oil
– 1pound cherry tomatoes, halved
– 2+ garlic cloves, pressed
– 1 tablespoon finely chopped parsley, plus more for serving
– 1 teaspoon honey, plus more for serving
– 1 teaspoon dried oregano and thyme
– Salt and black pepper
– 1 -2 (15-ounce) can white beans, drained
– 1(8-ounce) block halloumi, cut into ¼-inch-thick slices
– ½ lemon
In a large ovenproof pan over medium heat, add olive oil, spices, garlic, tomatoes, and parsley, and cook, stirring, until the tomatoes soften and release their juices (about 10 minutes). Stir in the beans and heat 3 minutes, then turn off the heat, arrange halloumi slices on top, and broil until the cheese is golden and crispy (about 5 minutes). Drizzle with olive oil, squeeze lemon over the top, add a light honey drizzle, garnish with parsley, and serve immediately with bread.

HALLUMIE IS SO GOOD! SOOOO GOOD! I like it with dipor topping of lemon juice,olive oil, dried red chili flakes and cracked black pepper . If you like a little spice, you can heat up your olive oil In a tiny pan and add your chili flakes and black pepper to it so they sizzle for about 30 seconds ,turn the heat off and let it come down to room temperature as you slice and grill the cheese. Cold lemon juice just before serving will bring it down to room temperature which IMHO is perfect.
