A whole pan with crispy and light sourdough and meatless since I wanted to do a Meatless Monday!

Macros:
457 calories
32g protein, 13g fat, 51g carbs

Ingredients:
– 2 whole tomatoes (220g)
– 30g onions, diced
– 100g cottage cheese
– 1 egg
– 10g sugar-free ketchup
– 5g parmesan
– 1 sourdough slice (mine was around 62g)
– Basil for garnish
– Spices (I used onion & garlic powder, paprika, italian herbs)

Steps:
– Chop your tomatoes and place them on a heated pan, then add onions and cover your pan.
– Leave the tomatoes and onions to cook until they become soft (around 10 minutes)
– After they're cooked, add cottage cheese, spices, ketchup and mix, then crack an egg into the tomato mixture and cover the pan to cook the egg (around 5 minutes)
– Remove from heat, then add parmesan cheese and your garnishes
– Enjoy!
