



I bought myself a pasta machine for Christmas and got to use it tonight; it was tricky to get the right consistency for the dough (I think it’s because where I live it’s pretty humid, right now humidity is 86%), but once I got it, it was pretty easy to move forward, and I am in love!!

How’s the taste ? Better than store
Bought pasta noticeably ?
Pasta dough really has to be firmer/drier than you think if you don’t want it to stick to the rollers or itself. After resting it always softens a bit. If you like firm bite, try semolina flour.
Fresh pasta is really great in baked dishes or soups because it doesn’t go all gummy because of the eggs. Lasagna is a revelation.
