For the love of God PLEASE try Japanese spice curry
If you are here as a tourist or a resident, you need to try Japanese spice curry. No two restaurants are ever the same (I’ve eaten at more than fifty), and it blows any other curry out of the water.

As far as I can tell, “spice curry” is just a Japanese approximation of Indian curry that originated in the 90s.

I don’t want ginger in my curry which I know is a staple of curry. I got some Kanazawa Curry Udon at a spot that allowed me to remove the ginger. It was GAS

I agree with this so much. What I love most is how personal each shop feels. The spice blends, the thickness, even the way the rice is seasoned can be totally different from place to place. It makes trying a new spot feel like a small adventure every time.
