I made this! It was good, but I'd go a tad lighter on the spices if you're sensitive. I did use a red onion and had to make my own heavy cream. It still captured the essences of Penne alla vodka, and my family was happy! The flavor is more bold than what I've had at restaurants, but in a way where I think some people would prefer a lighter flavor penne sauce.
People out here with stovetops that boil water so much faster than mine. I can't bring a pot of water to a boil and fully cook the penne in just 20 minutes.

The recipe my bois
Oil
3 shallots small diced
1tsp oregano
2tsp chili flake
1/4 tsp pepper
4oz tomato paste
6oz vodka
1 1/4C heavy cream
Reggiano rinds (optional)
OCEAN to taste (always taste)
1Cup pasta water
1/2C grated reggiano
1lb penne pasta
After adding pasta water simmer for 3-4 minutes
Great as soon as I'm done making it I can't eat it.
