What’s your location? What are the temperatures day/night? You may have too much sun and or evaporation. Might be worth trying to give the plants a little shade so they produce more leaves and reduce water loss. Would help to know your location

If they planted in coco coir only they will need some soil now.

Coco coir has no nutrients so you have to feed the plants well. Also try to give them some shade when they’re young and stressed like that. Full sun can come later when they’re strong.
