I keep a “label” (it’s really just a piece of painter’s tape) on mine with the particulars of the last feeding. I figure my husband is less likely to mistake it for a science project that needs to be thrown out!

Put it in the fridge and it’ll harden right up, then you can remove the fat and pour the starter in a new jar, should be fine, worth a try.

I would scrape off as much as you can and move to new jar. Leave on counter for a week and feed:discard every day. As they say in the medical field, “the solution to pollution is dilution”

You have the right advice, but if the grease was hot when it went in the jar, remove both the grease and at least a couple inches of the starter. Taking some from the bottom where the starter might have stayed cool to take into a new jar.
