
I found some beautiful long mafaldine at World Market. Made fresh ricotta. In a cold bowl I mixed the ingredients, then tossed with the hot pasta. Ingredients are simple: ricotta, some lemon zest and minced shallot, squeeze of half a lemon, salt and a drizzle of good EVOO, for twenty boiled pasta sticks. Al dente perfect!
