Roasted Garlic Mashed Cauliflower — Recipe by What Shall I Cook

Ingredients
• cauliflower – 1 large head, cut into florets
• garlic – 1 whole bulb
• olive oil – 1 tablespoon
• butter – 2 tablespoons (or use olive oil for lighter version)
• milk or cream – ¼–½ cup (adjust for creaminess)
• parmesan cheese – ¼ cup grated (optional but delicious)
• salt & pepper – to taste
• fresh chives or parsley – for topping
🔥 Instructions
Roast the garlic: Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 200°C (400°F) for 30–35 minutes until soft and golden.
Cook the cauliflower: Steam or boil florets until very tender (about 10–12 minutes). Drain well to avoid watery mash.
Mash it up: Squeeze the roasted garlic cloves out of their skins. Add to the cauliflower along with butter, milk/cream, salt, and pepper.
Blend or mash: Use a potato masher for a rustic texture or a blender/food processor for silky smoothness. Add parmesan if using.
Finish: Taste and adjust seasoning. Top with herbs before serving.
