    I worked in a brunch spot for a few years. Made thousands of omelettes. Still f it up at home half the time.

    I prefer scrambled eggs over omelets by a mile.

    Don’t know if I convinced myself of that to cope but hey, I’m simply not gonna open that can of worms.

    Just did an omelet station at a catered brunch, and I’m happy to say I only ruined like 10%

    Who is flipping omelettes? Am I the only one folding it as it slides out of the pan?

    My brother loves when the yolk breaks. (He cant flip an eggs to save his life)

    Why do you flip it? scramble at medium heat quickly, spread it all around, add topping and kill heat, fold on to plate.

    Cook scrambled eggs toss em on a plate…

    Mix up some fresh eggs…

    Pour into frying pan…

    Let set a few seconds…

    Pour the scrambled eggs back on top…

    Remove from frying pan and place on plate.

    Put more eggs in the frying pan let them set…

    Flip the other eggs on top…

    Now you have a perfectly yellow egg looking omelette with hidden goodies inside.
