Valhalla was one of my favorite tastings in Chicago (and left me full), and I’ve eaten all the 2 & 3 Michelin star spots in the city.

Yup. Valhalla rules. Weird snub by the Michelin guide, imo.

Looks like there’s quite a few new things on the menu since I last went. Might need to come through again. Did you end up going with a pairing or nah?

We just went in Thursday evening and loved it. The food was excellent and the service was top notch. I was pleasantly surprised by how much food was in each course!

Crazy that we had different desserts just a few days apart (we had the pavlova and then a bread pudding type dish and a tasting of chocolate!)

I agree wholeheartedly. I also thought the staff were really welcoming and friendly. It was fun chatting with the sous chefs, bartender and waitstaff. It is surprising and troubling that Valhalla has not been awarded a star.

Went yesterday and it was amazing. Only let down was the arroz caldo was not hot and more risotto like than I wanted it to be.

The ham water shot was the only thing I thought was unpleasant, everything else was great!

Didn’t find the slightly different version of this menu as inspiring a month ago, but glad you enjoyed it! I fear some of the reference points I didn’t have a familiarity with so I likely lost context on some dishes. Still had a good time, but wasn’t left eager to go back. Funny enough one of my favorite plates was a sablefish that they seemed to replace with the salmon belly.
