One thing he got wrong is where pita is from, ancient egypt did have flatbreads similar to pita but they were barely leavend, the pita that we know as pita the fairly leavend dough flatbread with the distinct pocket is most likely from Palestine.

Wow, I've been a fan of Brad from when he was screwing around in his fermentation station at BA but working with an Israeli is where I draw the line (and I'm a white dude). Did anyone else simply not get the cute little round springy guys experience at the rolling stage? I rolled mine lightly twice, turned 90 degrees, rolled twice again and after I’d let them rest they were just flat and oval shaped. They didn’t puff at all when cooking at 240C which is as high as my fan oven goes, and they have no cavity. So I’ve just made individual bread portions
