Decided to try smoking a chuck roast on my Primo. Salt brined it overnight. I also injected it with beef tallow. Next morning I added rub made of garlic powder, onion powder, smoked paprika, pepper, and a little more salt and put it back in the fridge for 4 hours.

Shout out to FireBoard 2 Drive. 2nd cook using it and it was FLAWLESS!!! Didn’t drop connection once, unlike its predecessor. Smoked at 225 until it hit 150, brushed liberally with more tallow, wrapped in butcher paper and continued the cook until it hit 195. Took it off and rested in my oven using the proof setting for 2 hours. Flavor was excellent but felt it was a bit dry. Husband liked it fine.

Today I made chili with the rest of it. Twas good!
