Salmon salad with marinated beets, broccolini, olives, smoked salmon, cottage cheese and chimichurri- after a few bites I also added avocado

    Chimichurri

    125 ml olive oil

    40 ml red wine vinegar (or less to taste, I use a very mellow red wine vinegar)

    30 g fresh parsley finely chopped

    3-4 cloves garlic finely minced

    1 small shallot minced

    2 g red pepper flakes

    2 g dried oregano

    a few dashes cumin

    a few dashes sweet paprika

    allow to sit for at least 30 minutes- the more time the better.

    I usually keep it for about 5 days and put it on just about everything
