Can anyone with more experience than me come up with a “calendar” for seasonal smokes?
Salmon is in September.
Turkey is obviously November.
Prime rib is a traditional Christmas dinner.
Ribs for summertime.
Etc.

Dude it’s going to be that way every year. Props to all the new guys who nailed their first prime rib and anyone who didn’t I wish you good luck next year. Yeah it gets stale but that’s what the community is for, love ya’ll.

I cut prime ribs into steaks and vac seal them. Because it’s affordable and tastes better. *norman rockwells four freedom painting*

Everytime I’ve had a prime rib has been bland and I don’t like it.
19lb choice rib roast, bones removed and smoked separately. Cut the roast in half and had 2x ~7.5lb roasts after trimming.
2 days of drying in the fridge, followed by 2 days of dry brining with SPG.
1.5 hrs on the smoker at 225°, and about 3.5 hours in the oven at 250° to a temp of 128°. Carry over took it to 137° over the next 30 mins.
Carve and serve!

Honestly I give props to all the kings that risked a few hundred bucks to try their first prime rib this year. Definitely not the best year to do it considering how fucking expensive they are, so hope it turned out!
