Salmon: olive oil, salt and pepper, oven at 400°F until 150°F in the middle (roughly 15min)
Arugula salad: mince a clove of garlic into lemon juice, add salt and drizzle in olive oil while whisking with a fork. Dress arugula. Add chopped pistachios and microplane some parm on top.
Roast veg: fill baking dish with halved mushrooms, whole garlic cloves, and cherry tomatoes, drizzle with olive oil and sprinkle with salt. Roast at 400°F until your preferred doneness (roughly 25 min for me).
Lupini bean crackers: followed recipe by Justine Doiron from her cookbook. Pat dry 15 oz of beans (any white bean would probably work). In a bowl, mix 6oz grated parm, 2T EVOO, 1T rosemary, 1T Calabrian peppers. Spread on baking sheet covered with parchment. Add beans on top. 400° oven until golden brown (roughly 35-40min).
