One loaf going to our neighbor who cleared out our driveway with his snow blower, one as a gift, and one to keep to use bread crumbs in my meat balls then to make and bake another 15 or so loaves for famoly holiday gathering this weekend.

25% levain or 100g fed at a 1:3:3 ratio

2% Diamond Crystal kosher, or 8 grams

  7. Mine come out shaped similarly but the outside generally has flour patches on it from sitting in the banneton. How do you get the outside so clean!?

    Do you score your dough before putting in the oven or do you wait a few minutes, take out of oven, deep ear score, and return to oven?

    These look amazing – may I know your oven settings? I’ve been struggling to get a good oven spring without using a Dutch oven. I’ve tried spritzing the loaves with water and generating steam with lava rocks but nothing seems to work!
