I bought myself this setup for Christmas. I removed the black plastic thing inside the original delonghi portafilter to fit a non-pressurized basket. A bottomless portafilter, a puck screen and the racilio steam wand are coming soon.

Help ?: There is quite a lot of water coming out of the steam wand. I start it once to remove the water and a second time once there is less water to steam my Milk but there's still too much. Its pretty irregular, sometime its ok and sometime the water flow does not go down when i turn it on again.
Can i do something or is it normal ?

Totally normal on these machines. The steam boiler shares water, so you’ll always get some water first.

Let the steam mode fully heat, purge into a cup until it’s only steam (no sputtering), then start milk. If it’s inconsistent, give it a few extra seconds to heat before opening the wand again.

The Silvia wand will help a bit with control, but the purge step will always be part of the workflow 👍

The Silvia wand will make it slightly worse since it’s fully metal.
I have it myself on the older version of the dedica, water is normal when steaming, the dedica is lacking a bit in power. Do you have the 230V or the 110V version? Might be even worse on the 110V

As has been said, purge as much water as you can. If you get the wand hot enough you’ll minimise the water coming out, but it will never produce truly dry steam. Even duel boiler units struggle to do that.

I forgot to say. That’s a nice and very well thought out starter set. You’ve chosen well. 💯

Remember to push the steam button before turning on the steam. I sometimes forget and then the machine will only produce warm water ._.
