Ingredients for the vegetable tagine (serves 4):

2tbsp olive oil
2 red onions, peeled and cut into 8 wedges
2 heads of garlic, peeled and separated into whole cloves
1 fennel bulb, cored and sliced
1tbsp fennel seeds
1tbsp cumin seeds
2 parsnips, peeled and chopped
1 large, sweet potato, peeled and chopped
2tbsp harissa paste
800g tinned tomatoes
400g cooked tinned chickpeas
150g dried apricots
3 preserved lemons, sliced
150g green olives, pitted and left whole
500ml vegetable stock
1 lemon, to squeeze
2tbsp parsley leaves, plus extra for garnish

Ingredients for the fruity couscous:

400g couscous
2tsp salt
ÂĽ tsp cinnamon
½ tsp ground cumin
½ tsp coriander
½ tsp smoked paprika
50ml red wine vinegar
30-50g caster sugar
100g golden raisins
½ pomegranate, seeds removed
100g pine nuts, toasted
100g shelled unsalted pistachios nuts
3 spring onions, chopped
2tbsp olive oil

Method for the vegetable tagine:
• Sauté the onion, garlic cloves and fennel in some olive oil for a few minutes before adding the spices and root veggies. Add the harissa paste and tomatoes, chickpeas, apricots, preserved lemon pieces, olives and stock.
• Simmer for 30 minutes and then finish with the lemon juice and parsley.

Method for the fruity couscous:
• Cover the couscous, salt and spices with boiling water.
• Cover and allow to absorb, this will take around 10 minutes.
• Warm the vinegar and sugar together to dissolve.
• Fork the couscous so the grains separate and then add the vinegar mix and the remaining ingredients, finish with the olive oil.

To serve:
• Serve the vegetable tagine with the couscous and garnish with the fresh parsley.
