This authentic Italian Peposo recipe is perfect for fall, winter, Sunday dinner, holiday or any night you want true Tuscan comfort food.
Ingredients:
3 lbs beef chuck
1 bottle Chianti wine
4 garlic cloves skin on
3 bay leaves
Sea salt
Crushed black pepper
Whole peppercorns
Extra virgin olive oil
Instructions:
1. Warm olive oil in a heavy pot and add whole garlic cloves.
2. Add beef chuck and sear on all sides.
3. Season with salt, crushed black pepper, whole peppercorns, and bay leaves.
4. Pour in the entire bottle of Chianti and bring to a gentle boil.
5. Cover and simmer on low for two hours.
6. Uncover and reduce the sauce.
7. Remove peppercorns if needed and serve.

looks amazing man, would you be able to make sicilian arancini, i put saffron in my rice and i put a 1/2 teaspoon of ground clove in the meat mixture with some bay leaves and peas of course the soffrito, i cook it with the lid half on for 2 hours to let it reduce if you do make arancini please try the meat mixture this way giovanni, its amazing. ❤
and i also recommend you try pasta alla norcina from Umbria Italy, very good pasta dish

Besides beans and spinach, what else can you serve with this amazing beef? Somehow mashed potatoes (my favorite), doesn’t seem quite right.
