    Sauce looks like it had the right blend of added pasta water creaminess. I top mine with 36mo aged parmigiano and black pepper.

    Looks edible and probably tasty, but it doesn’t fully come together as a traditional carbonara. The pasta choice makes it a bit harder for the sauce to cling, and the sauce itself looks more oily than creamy, as if the emulsion didn’t quite set. The pork pieces seem a little unevenly rendered. Overall, it feels more like a pork-and-pepper pasta than a classic carbonara. 5/10
