I thick cut them, fill a cast iron skillet or cast iron Dutch oven with them, cook them on high with REALLY hot oil, about 1/3 way through, start them up/break some apart to release extra starch into the oil, cook them till golden. Crispy on the outside, fluffy, baked potato-like on the inside.
