  1. Unlike spinach, which darkens when blanched (and notoriously shrinks, triggering the economic cynic within me), French Beans go vivid. I swear, when I have plans to make instant noodles and have these beauties at home, I live for them changing shades like leaves in autumn.

    It's one of the "watch and relax" kinda moments for me.

    Though I'm still mad at spinach.

    ▢500 gram green beans, cut into half lengthwise
    ▢2 tablespoon extra virgin olive oil
    ▢1 teaspoon Dijon Mustard
    ▢½ lemon, juiced
    ▢½ teaspoon minced garlic
    ▢½ teaspoon red chilli flakes
    ▢1 tablespoon white sesame seeds
    ▢handful of parsley, chopped
    ▢1 teaspoon salt or to taste
    ▢crushed black pepper
