A bit longer time doing macronage. But these look good! It’s a better to under than over.

yeah that makes sense i was scared of over doing it

For smoother and shinier tops: just do slower batter tumbles instead of deflating it. The tops will smooth out and be less bumpy (of course your almond flour will determine this too). I follow Bake Toujours and copy her macaronage technique
