Sayyadiyah صياديه @canarybasmati

Ingredients:

– tuna steaks or any fish of choice
– 1/2 flour
– 6 to 7 onions
– 1/2 cup of oil
– 2 cups of @canarybasmati
– 1 tbsp tomato paste

Spices & seasonings:

– salt & pepper
– 1 tbsp cumin powder
– 1 tbsp coriander powder
– 1 tbsp prawn or chicken stock powder
– 1 tsp seven spice
– 1 cinnamon stick
– 2 bay leaves
– 3 cardamom pods

Sahawuq:

– 2 tomatoes
– 2 chilies
– 2 cloves of garlic
– small bunch of coriander
– drizzle of olive oil
– salt

Tahini sauce:

– 4 tbsp tahini
– 2 lemons
– salt
– water mixed gradually till you reach a sauce consistency

– start seasoning the fish steaks with the cumin. Coriander and cover them with a bit of flour. Then shallow fry them in the oil on both sides on high. Around 7-8 minutes till you see a lovely golden crust.

– finely chopped or blitz the onions then add them to a pot with some of the oil that we fried the fish with. Start the heat on high and keep stirring.

– this process is simple but will take a bit of time. Keep stirring till the onion juices have evaporated and the onions take a bit of color.

– that’s when you drop the heat to medium low and keep stirring. This is preference based. Keep browning the onions to the point where they are the darkest possible without being burned. Very crucial to keep stirring on low.

– once the onions are browned. Add the tomato paste. The spices and 2 cups of washed and soaked rice. Then add enough water to cover the rice by 1 cm.

– let the pot boil uncovered for 5-6 minutes or till you see the water level has gone down drastically. Basically on the level of the rice.

– then drop the heat to the lowest possible. Cover and let the rice finish cooking for 20 minutes.

– place the rice on a serving plate. Top it with the fish. Garnish with lime slices. Serve it with sahawuq and tahini and enjoy.
