    What’s the green layer? Never seen that before. I always thought it was pastry -> mushroom duxelle -> tenderloin, no?

    Looks fantastic. An interesting to note though, is that we’ve seen a LOT of beef wellingtons lately on reddit. And I haven’t seen a single one that is flawless.

    It really reinforces the statement that beef wellington is notoriously difficult to get perfect

    Is everyone making Beef Wellington suddenly because of the mushroom poisoning murder in Australia? I’d barely heard of the dish before this year, now everybody and their mother is suddenly making it for the holidays.
