Sancerre is an upgrade to Frascati (though I am a big fan of real Frascati).

When I’ve eaten this and alla gricia in Rome, the guanciale is always on the well done side of being rendered so looks perfect!

Looks really good, but I subjectively prefer Spaghettoni or Rigatoni.

The guanciale is supposed to be crispy so I’d say you did great. The eggs look properly incorporated and not scrambled I’d give this an 8/10. Alittle green on top and a slightly more uniform plating and you’d be 10/10

Im sure it’s fine, but: – where’s the sauce? – can’t imagine white wine pairs well with it – could do with a sprinkle of cheese for garnish.
