Reverse seared this beautifully marbled zabuton from Snake River Farms. No meat thermometer in sight. Perfect cook in my opinion. No utensils necessary.

    For me it would be a bit too rare, but as far as rare steaks are concerned, that’s almost pornographic.

  5. This is how you know you’ve made it in steak world! Great cook. I’ve had to do that a few times when traveling and don’t have my setup, it feels good to nail it on level playing field
