👨🍳 Copycat Minestrone Soup (Ready to Serve Style)
Servings: 1 can style
Prep Time: 10 minutes
Cook Time: 15 to 20 minutes
Total Time: about 25 to 30 minutes
🥣 Ingredients
Unsalted butter 10 g (about 2 tsp)
Yellow onion, very finely minced 30 g (about 3 tbsp)
Celery, very finely minced 15 g (about 2 tbsp)
Carrot, very finely minced 15 g (about 2 tbsp)
Garlic, minced 3 g (about 1 small clove)
Crushed tomatoes 220 g (about 1 cup)
Tomato paste 20 g (about 1 tbsp)
Vegetable broth 260 g (about 1 cup plus 2 tbsp)
Water 40 g (about 3 tbsp)
Green beans, cut very small 20 g (about 2 tbsp)
Zucchini, very finely diced 20 g (about 2 tbsp)
Kidney beans, drained and rinsed 50 g (about 1/4 cup)
Great northern beans, drained and rinsed 40 g (about 3 tbsp)
Small pasta (ditalini or tiny shells) 20 g dry (about 2 tbsp)
Kosher salt 4 g (about 3/4 tsp)
Sugar 2 g (about 1/2 tsp)
Dried basil 0.5 g (about 1/4 tsp)
Dried oregano 0.5 g (about 1/4 tsp)
Black pepper 0.3 g (about 1/8 tsp)
Optional boosters: vegetable bouillon 0.5 g, MSG 0.25 g
🥄 Instructions
Melt butter on medium low. Add onion, celery, carrot, and garlic. Cook 5 to 6 minutes until very soft, no browning.
Stir in tomato paste 30 seconds. Add crushed tomatoes and mix.
Add broth and water. Bring to a gentle simmer.
Add green beans, zucchini, kidney beans, and great northern beans. Simmer 5 minutes.
Add pasta. Simmer 8 to 10 minutes until very soft.
Season with salt, sugar, basil, oregano, pepper, and optional boosters. Simmer 1 more minute.
Let it cool a bit. The broth tightens and tastes even closer to the can.

Campbell's UK discontinued my favourite soup when I was a kid. I was addicted to their condensed scotch broth. There's something in the other brands I hated. But theirs was perfect. Then they stopped selling it in Scotland (where I was…and where the soup is from!) but kept selling it in England and Wales. Then just got rid of it completely.
For a while they insisted it was still available but it was a lie!
