  5. that looks perfect. well done, OP. picanha (pi-cahn-ya) is probably my favorite steak cut. it has an intensely beefy flavor and is very tender, not as tender as filet, but can be as tender as ribeye. that fat cap looks perfect.

    you can’t always find it at the butcher or the grocery store but when they have it (usually sold as rump cap or sirloin cap) i always get it. not super popular here, but it’s the steak of brasil.

  6. Dude, if you love sticky rice and you love delicious tender cuts of meat you should try making steak nigiri sometime. I got a really nice cut when I did it and chose the best slices to go on top of the rice (I also ate all the worst slices lmao).

    It’s a meal I still think of often, might make it again this week actually.

    Semi-related, but some mall food courts (weird, right??) here in SoCal have a spot called La Vaca Brazilian Grill. All the traditional Brazilian cuts of steak, but in a by-weight format. Load up a little paper plate with food bar type sides, ask for a few cuts of the skewered meats they have going, and then pay by the weight.

    I typically get a really nice picanha (I’m guessing about 10 oz?), a bit of Caesar salad, and some greens for about $20.

    It’s not Peter Luger’s, but it’s a pretty nice, relatively cheap, steak lunch.

    Don’t be a scumbag and try to take gross advantage of them, and they have rules regarding how people game their system, but it’s some pretty solid stuff considering the price point.
