Sushi chef did an AMA on this subreddit. I asked about rice to fish ratios. I still can’t roll as tightly as I want, but nothing goes to waste.🍣
Nigiri – 12g rice, 12 – 14g fish
Rolls – 120 – 140g rice per roll

First off, applause for no globs of mayonnaise! Secondly, I would happily eat that. I’m a snob in a lot of regards to sushi, but this looks great for a first attempt.
