*Ingredients:*
For the Poolish:
* Water – ⅓ cup + 1 tbsp. (100 ml)
* Fresh yeast – ⅔ tsp. (2 g) OR dry yeast – ⅓ tsp. (1 g)
* Bread flour – ¾ cup + 2 tbsp. (100 g)
*For the Dough:*
Water – ½ cup (120 ml)
Bread flour – 1¾ cups (220 g)
Salt – 1 tsp. (6 g)
Yes, that’s really it. 4 ingredients to make the perfect baguettes at home.

Is there any benefit to using fresh yeast over dry yeast?
Do I have to use an air tight lid on the bowl or can I use a plate or a towel or something? I don’t have specific lids for my mixing bowls.

This looks easy and delish! I have attempted to grow a sourdough starter, but Yeastie Boys are not growing. Think this method with “Poolish” is the better and less time consuming method..thank you for such simple and concise instructions and no excessive yammering.
