
This my second attempt to sous Vide. This time I did a Sirloin Steak. 132F for 3 hours . Came out very tender. I freeze it for 5 mins . Pat dry it really good and sear about 50 secs per side in hot oil .
How I do ? Any recommendation?

3 hours for sirloin is insane.
