This one is always a crowd pleaser over at the parents! I’ve heard them called German Pancakes, Dutch Baby, and I’m sure there’s more regional names out there also. I’ll post my version below. Be sure to preheat the cast iron you plan to use in the oven as the oven comes to temp. I usually aim for baking at 415F. You want that pan soaking up heat for atleast 20’ before adding the batter, so the batter develops dramatic, poofy, folds from the heat soaked dish. When I use a heavier cast iron pan, that’s really been heat soaked in the preheated oven, I get crazy folds across the whole dish, looks like an abstract wave sculpture or sea coral or something. Very fun indeed!

Combine
– 6 room temp eggs
– 1 cup room temp whole milk
– 1 cup AP flour

Whisk til batter is smooth, then add
– dash of vanilla
– dash of cinnamon, nutmeg to taste
– pinch of salt is key

Next carefully pour the 1/3 stick of melted butter in the empty, preheated cast iron pan. It is going to pop and crackle when the water instantly boils out of the melted butter after hitting the hot pan, sometimes I let the hot pan sit for 1-2 minutes to take some of the extreme heat out before adding the melted butter. Just practice here. Make sure the pan is evenly coated with melted butter, then begin to gently pour the pancake batter into the center, so that it fills the pan evenly.

Place back into oven, leave yourself some head room up top incase you get a huge lift, they really do have a mind of their own.

After removing, you can gently brush with a little more melted butter, or move around some that has pooled on top. I squeeze on a decent amount of fresh lemon, then dust with powder sugar and a little cinnamon, fill with whatever you’ve got after that. Bananas, berries, you can even take the whole dish savory instead if desired.

Each one can be unique. Experiment, with different cast iron pan types, thicker ones vs thinner. Occasionally I’ll be in the mood for a lighter, more crepe like version of the dish, so I’ll use just a bit less flour. It makes the dish surprisingly lighter, but browns quicker. Enjoy!!

    Very similar to a Yorkshire pudding in England. We’d fill that up with sausages, mashed potatoes, peas and onion gravy.

    My kids love Dutch babies. We make them regularly. The only thing we do is add butter to the pan while it’s preheating in the I’ve. It melts and gets nice and brown.

  15. I’ve made one once and it was very delicious, but not quite so dramatically poofed as this. I think when I did it some apples were involved as well, though it’s been quite a while. I’m definitely saving to try your tips out sometime.

    This looks like the starting stages of Kaiserschmarrn I make in a cast iron pan in the oven before breaking it apart and sprinkling powdered sugar on top (I also leave out the rum-soaked raisins as I don’t like raisins). (This is also understandable why you say some call it a German Pancake as the two are very similar. I am German, so have eaten both often.)

    The recipe I use requires one to flip it halfway through baking, though.

    I’ve made this for a while, but in a glass cake pan. Also, I melt the butter in the pan while the oven preheats and pour the mix in that instead of melting the butter separately and adding to a preheated pan.

    FYI you can totally make these in a regular pie pan too in case you don’t have a cast iron pan!
    We always just melt the butter in the pan as it’s heating.
